Well all my characters are level 30, so would anything happen if I level them more, like in the real game where you lose sp?

All that changes is get more stat points, exp needed to level rises and characters get stronger nothing else happens.

Nah, when 2ND job is released it won't affect your sp or ap at all F2 .
